Danes Cheese Cupcakes with Vanilla Butter Frosting

Makes 15 cupcakes

  • 150 g DANES CHEESE, grated
  • 1 1/4 cup   all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 2 pcs fresh eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tsp vanilla extract

   ​For Vanilla Frosting:

  • 1 cup white sugar
  • 1/4 cup water  
  • 1/2 cup egg whites
  • 1 1/2 cup butter, cubed and softened
  • 1 tsp vanilla extract


  1. Preheat oven to 350ºF.
  2. Mix DANES CHEESE, flour, baking soda and salt. Set aside.
  3. Beat butter and sugar in large bowl with electric mixer on medium speed for 5 minutes or until mixture is light and fluffy. Add eggs, one at a time.  
  4. Add sour cream, milk and vanilla extract.  Gradually add flour mixture while mixer is on low speed. Do not overbeat.
  5. Spoon batter into muffin cups, filling each cup 2/3 full.
  6. Bake for 12 minutes.  Remove from pans when completely cooled.
  7. Make vanilla frosting: combine sugar and water then boil.
  8. Whip egg whites to stiff medium peak. Pour sugar mixture while mixing at medium speed then whip on high speed until cool to touch.
  9. Add butter and vanilla extract until evenly combined.
  10. Top each cupcake with vanilla butter frosting and sprinkle Danes cheese.
