Ham and Candied Walnut Salad with Blue Cheese Croutons

Makes 2 - 3 servings

Cooking Time 10 minutes


  • 200 g HOLIDAY HAM 800 g, cubed
  • As needed vegetable oil
  • 2 tbsp walnuts
  • 1/2 cup white sugar
  • 1 1/2 cups lettuce, shredded
  • 1/4 pc pear, thinly sliced

   For Croutons:

  • 1 tsp blue cheese, crumbled
  • 1 pc white bread, diced

   For Vinaigrette:

  • 1 tbsp  apple cider vinegar
  • 1/2 tsp  Dijon mustard
  • 3 tbsp  olive oil
  • to taste  salt  
  • to taste  black pepper


  1. Lightly fry HOLIDAY HAM.  Set aside.
  2. Make croutons: spread crumbled blue cheese on top of bread.  Toast until brown.
  3. In a bowl, blanch walnuts for 30-45 seconds and immediately toss in white sugar and a dash of salt until coated.  
  4. Fry walnuts in a pan over medium heat until sugar melts and turns light brown.
  5. Make vinaigrette: whisk apple cider vinegar, mustard and olive oil in a  small bowl.  Season with salt and pepper to taste.
  6. On a serving platter, arrange lettuce, pears and Holiday Ham. Top with candied walnuts and blue cheese croutons. Drizzle with vinaigrette.
