Corned Beef Croquettes

Makes 9 servings

Ingredients

  • 1 can HIGHLANDS GOLD CORNED BEEF 320 g
  • 2 tbsp vegetable oil
  •  3/4 cup onion, minced  
  • 6 cups potato, mashed  
  • to taste salt    
  • to taste pepper    
  • 1 1/2 cups flour    
  • 6 pcs egg, beaten  
  • 1 1/2 cups breadcrumbs  
  • As needed vegetable oil

   For Aioli:

  • 3 tbsp garlic, minced  
  • 1 1/2 cups mayonnaise  
  • to taste salt

Procedure

  1. Sauté onions and HIGHLANDS GOLD CORNED BEEF in vegetable oil.  Transfer mixture into a bowl.
  2. Add mashed potato.  Mix well.  Season with salt and pepper to taste.
  3. Form 1 inch ball and dredge each ball mixture in flour.  Dip in egg. Dredge in breadcrumbs.  Shake off excess crumbs.  
  4. In a separate pan, fry croquettes until golden brown. Remove from heat.  Lay on an absorbent paper to remove excess oil.
  5. Make aioli: combine garlic and mayonnaise. Add salt to taste.
  6. Serve croquettes on a platter with aioli on the side.
